Marinated Cold Chicken Dish

Ingredients
  • Fresh chicken breast and chicken drumstick
  • Salt 2 tbsp
  • Chinese prickly-ash 4 - 5
  • Ginger 2 small sliced pieces
  • Cooking Wine 300 ml
Preparation
  • Clean chicken breast and drumsticks.
  • Spread salt and Chinese prickly-ash evenly over chicken breast and drumsticks in a container, add cooking wine, then cover it up in refrigerator.
  • Marinate the salted chicken for about 3 days.
  • When the chicken meat shows light red color, it means ready to cook.
  • Cook the well-marinated chicken in the boil water with 2 small sliced gingers.
  • Chill the chicken with sauce into refrigerator for 6 hours.
  • Chop chicken into small parts as desired, dish up and serve.
